Chefs Corner - 19:46 16 Jun 11 After a couple of movie / tv evenings where we shared some home cooked goodies we discussed sharing recipes, so I thought I'd try a thread for this

I'd really like to know how to do the lime and honey chicken that Liz made the other week. That was Awesome!

Anyways - since a few asked for the cookie recipe I have one to start us off....

Re:Chefs Corner: Hardcore Cookies - 19:47 16 Jun 11 ***Hardcore Cookies***

100g plain flour
1 tablespoon cocoa
1 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
1/2 teaspoon ground cinnamon
50g light muscovado sugar
50g butter
1/2 - 1 teaspoon finely chopped fresh chili (depending on strength!)
2 tablespoons golden syrup
75g dark chocolate chopped into small chunks

Stir all the dry ingredients together in a bowl or food processor. Add the butter and rub in with fingers or process, if using. Mix in the chili.

Add the syrup and mix first with a spoon and then squeeze together with your fingers to make a ball. Roll into a log and slice into 12. Form into balls and squish down into patties/ cookie shape on greased baking sheets.

Bake at 180 degrees for 8-10 minutes until the tops are craggy.

Leave to cool for 2 minutes and transfer to a wire rack. Can be eaten warm or within a couple of days.

LOL, possessive chef! Thing is I find a lot of people ask for a recipe but then are too lazy to bother to make them

Re:Chefs Corner - 21:30 17 Jun 11 Okay Hun ,
This is an old family recipe handed down from my dear old grandma , so listen very carefully, 1) chicken breast, 2) marinate above with LIME juice and OLIVE OIL, 3) fry off in OLIVE OIL and put to one side and allow to rest, 4) put in a saucepan clear honey, chilli sauce, sugar and gently heat, 5) transfer cooked chicken into saucepan, gently heat until sticky, season to taste. I may also have used orange juice and soy sauce! you will have to experiment. Bonne chance, I look forward to your spicy limed chicken
kind regards, chunkey (liz).
